I didn’t really like lavender until more recently, like the last couple years. Is that weird, or did/do you have a lavender aversion, too? I don’t know if it is related to changing my diet. Going paleo definitely changed my taste buds, and I have to wonder if it has changed the rest of my senses, too. I seem to have a heightened sense of smell, and now I find lavender so very appealing. In fact, I use lavender essential oil and also have a lavender lip balm I love. It seems lavender has become a part of my daily rituals, so it is not too surprising that I have added it into our kitchen routines as well. Lavender is also one of the few things that naturally grows well here. We have it on our property.

Don’t be mad this recipe is for lemonade and that I haven’t perfected my honey lavender ice cream yet! I bet you could turn this lemonade into a popsicle that tastes pretty fantastic and refreshing on a hot summer day though! Just saying. Honey Lavender Lemonade (Paleo + Refined Sugar-Free)

Ingredients

  • 6 cups filtered water
  • 1/4 cup raw local honey
  • 1 handful fresh lavender buds and/or stems, (you could try rosemary or basil too)
  • 1 cup fresh squeezed lemon juice, (about 8-10 lemons depending on their size)

Instructions
 

  • In a large pot, bring your water and honey to a boil, stirring occasionally. Once it reaches a boil, turn the heat off, add your lavender, and let it cool.
  • While your honey lavender water is cooling, squeeze your fresh lemon juice in a measuring cup. It will take about 8 to 10 lemons to get to a full cup of juice.
  • Once your honey lavender water has cooled, pour in your lemon juice, and stir it around. Taste your lemonade and adjust as needed by adding more water if the lemon flavor is too strong and more sweetener if it is too tart. Now, you can strain your lemonade to get the lavender pieces out, or leave them in your pitcher or serving container for aesthetic. I like the way it looks in our big glass mason jar dispenser with the lavender floating around. I even added some extra lemon rounds. It doesn't make its way into the glasses and is just for looks. If I were just going to make this and drink it myself, I'd probably just strain the lavender out with a mesh strainer. Add ice and serve your honey lavender lemonade!
