5 Ingredient Pecan Date Energy Bites (Paleo, GF + Refined Sugar-Free)

What's better than a tasty little bite? Well, a tasty bite that is super simple to make and only has 5 ingredients! You will recognize and probably have on hand all 5 of the ingredients for these Pecan Date Energy Bites if you have a pretty well stocked Paleo pantry!

  • 1 cup pecans (plus more for topping)
  • 1 cup unsweetened shredded coconut
  • 1/4 cup almond butter (plus more for topping)
  • 8-10 dates, pitted


  • raw cacao nibs (optional)


  1. Place the pecans, coconut, almond butter and dates to a food processor. Process until ingredients are combined and a ball starts to form in the processor. You may have to stop and scrape the sides down a couple times. 

  2. Once ingredients are combined, stop processor and remove the blade. Line a baking sheet with parchment or wax paper. Roll mixture into balls and place on lined baking sheet. 

  3. Roll in cacao nibs if you are using them, and drizzle with more almond butter over all the balls.

  4. Place in the fridge or freezer to set. Once set remove and store in an airtight container in the fridge. Enjoy!
