1tbspcoconut butter- softened (put the jar in a bowl of hot water when you start making the donuts to let it soften)
pinch of sea salt
For the glaze:
1-2tbspraw local honey
1tspcinnamon
In addition you will need a little bit of coconut oil for greasing the tops of the donuts before you sprinkle the crumble and drizzle the glaze.
Instructions
Preheat your oven to 350 degrees Fahrenheit and place your coconut butter jar in a bowl of hot water to soften it.
Place all of the dry ingredients for the donuts in a medium mixing bowl. Use a whisk to mix them up so that all of the dry ingredients are evenly dispersed.
Add the rest of the donut ingredients to your bowl and whisk them together until a thick batter forms. Scoop the batter into a ziplock bag. Close the bag and then snip one of the lower corners off so you can use it as a piping bag. Either make circles in your donut pan or make smaller circles with the dough in a muffin pan. You could try flipping the muffin pan upside down and making larger circles around the muffin mounds. Or you could make donut holes by placing tablespoon sized balls on a cookie sheet.
Place your donut pan, muffin pan, or cookie sheet in the oven and bake for 10 minutes.
While the donuts are baking, make your crumble and glaze.
For the crumble, pulse your nuts in a food processor until they are pretty fine and just some small clumps remain. Then, pour your nuts into a small mixing bowl. Add the rest of the crumble ingredients and use a fork to mix them together so it gets a little more clumpy, like the topping on an apple crumble or crisp. Set it aside until the donuts are done cooking and make the glaze.
Heat up your honey and cinnamon in a little ramekin or small bowl in the microwave. It will only take about 20 seconds. Stir vigorously with a fork so a glaze forms. Set aside until the donuts are done cooking.
Once the donuts are done, carefully remove from the oven. Use the back of a spoon to spread a little coconut oil on the tops of each donut and then layer on the crumble and then the glaze last. I like to do each donut at a time so that the coconut oil melts and then the crumble sticks to it, then move on to the next donut. You can do all of the glaze at the very end.
