There is something so cozy about stew packed with beef and veggies. This crockpot beef stew is Paleo + Whole30, yet hearty and boasts lots of flavor!

Ingredients

boneless beef chuck roast, cubed
(stew meat)

onion, roughly chopped

cups
winter squash or potato, cubed
(1 delicata, 1/2 butternut or 1 large potato)

carrots, chopped into chunky rounds

mushrooms, halved

broth
(bone, chicken or beef)

tomato paste

fresh rosemary, finely chopped

fresh sage, finely chopped

Instructions
Prep the vegetables as indicated above.
Place all of the ingredients in your crockpot in the order listed above.
Cook on low for 8 hours.
