Can’t get enough soup this year! This Paleo + Whole30 celeriac soup is extra hearty and hits the spot when you’re looking for comfort food! It reminds us of a potato soup, and you’re going to love layering on all the toppings!
What Is Celeriac?
I was first introduced to celeriac when I signed up for a CSA box. I opened one of my early boxes and was like uhhh….why did they send me this root and what the heck do I do with it?!?! So, if you’re having those same feelings, then here’s a quick explanation. Celeriac is a root vegetable, also called celery root. It’s in the same family as celery, but is different plant. It’s not real pretty and you have to peel it before you use it.
How To Peel Celeriac
Sooo…once you check out what Celeriac looks like, you’re going to be like where do you even start to peel this thing?! Don’t get scared. It’s really not that bad. Promise. Here’s my technique for peeling celeriac. First, I cut the bottom and top off to make flat surfaces. This helps with the peeling immensely. Set your celeriac down on one of the flat ends and use a pairing knife with a downward motion to peel the skin and knobby parts off. Once you make your way around the entire celeriac, flip it over onto the other flat end and repeat to get the rest of the bits off. That’s it!
A Hearty, Comfort Soup
If you are a fan of potato soup or chowder or any thick, creamy soup, you’re really going to dig this celeriac soup! It’s hearty and cozy and makes the best vessel for ALL THE TOPPINGS! Like for reals. Some of our favorites are fresh thyme, bacon bits and cheese (if you tolerate dairy and aren’t super strict Paleo or doing a Whole30). You could add some coconut yogurt, some meatballs, any leftover protein you need to use up in the fridge, etc. Really, there are lots of ways you can go with this soup!

Celeriac Soup (Paleo + Whole30) Instant Pot or Stove Top
Ingredients
- 2 leeks, diced , (white and light green parts only)
- 4 cloves garlic, minced
- 2 celeriac, medium sized, peeled and cut into small cubes
- 2 tbsp avocado oil
- 1 tsp fresh thyme, finely chopped , (plus more for topping)
- 1 tsp sea salt
- 1 tsp ground pepper
- 4 cups vegetable broth, (or chicken broth)
- 1 lemon, juice of
Optional toppings:
- shredded cheese, (omit for Whole30 or strict Paleo)
- cooked bacon bits
Instructions
For the Instant Pot:
- Prep leeks, garlic and celeriac as noted. Press the "Sauté" button on the Instant Pot and add avocado oil. Once hot, add the leek and garlic and cook, stirring occasionally for 3-4 minutes.
- Press the "Cancel/Keep Warm" button, and add the celeriac, thyme, salt and pepper. Stir to mix and then add in the broth.
- Secure the lid on the Instant Pot and close the pressure valve. Press the “Manual” button or "Pressure Cook" and cook on high pressure for 5 minutes.
- When the soup is done cooking, quick release the pressure. Blend the contents of the Instant Pot to a smooth consistency with an immersion blender (or carefully transfer contents to a blender and blend).
- Add in the lemon juice and stir. Taste and season with salt and pepper as desired. Ladle into bowls and serve, topping with chopped thyme and optional toppings as desired.
For the stove top:
- Prep leeks, garlic and celeriac as noted. Heat a large stock pot over medium heat and add avocado oil. Once hot, add the leek and garlic and cook, stirring occasionally for 3-4 minutes.
- Add in the celeriac, thyme, salt and pepper. Stir to mix and then add in the broth. Bring to a quick boil and then lower heat to medium-low. Cover and simmer for 10-15 minutes, or until the celeriac cubes are softened.
- When the celeriac cubes are soft, blend the contents to a smooth consistency with an immersion blender (or carefully transfer contents to a blender and blend).
- Add in the lemon juice and stir. Taste and season with salt and pepper as desired. Ladle into bowls and serve, topping with chopped thyme and optional toppings as desired.

Hi Linda – For the nutrition info, as part of our real food/paleo lifestyle we don’t track any nutrition information personally, and it has been really liberating for us and helped us find food freedom. For that reason we don’t post the nutrition info on our recipes, with the only exception being the Keto specific recipes on our site. You could plug the ingredients into an online nutrition calculator like myfitnesspal if needed though.
I loved this soup using the Instant Pot! I didn’t have leeks, used red onion, and a bit less celeriac so it was thinner than what is shown here. Very tasty!!
