Dessert! I really love dessert. I love making it, I love sharing it with others, and I love eating it. I often like it at non-traditional dessert times too. Like in the morning with coffee (after a real breakfast of course) or in the afternoon as a little treat. Don’t get me wrong, a little something sweet at night after dinner is good, too. Sometimes I just like to enjoy a treat before then! You’ll definitely want to read on for some of my favorite perfect sized desserts and treats!

My favorite treats are the little ones, like just enough to curb your craving, but not too much where you wreck your entire day. This is why I was thrilled when Heather from Cook It Up Paleo released her latest ebook, Paleo Mug Muffins 2! It has 20 recipes for single serve mug muffins, cakes, breads, and other treats. Isn’t that just perfect? A single serving that’s not too big and not too small. I’m totally in! Justin never minds being a taste tester either, so he was in for helping me find the best recipes in this ebook to share with you. I find that if I have a little (and I do mean little in size) treat just about every day I don’t have substantial sweet cravings or feel like I’m abstaining or deprived. I know that if I want something sweet I can have it, and typically a small treat is enough to satisfy me.

Beyond just the single serving size of each recipe, I also really appreciate that there are options for baking for all different kinds of allergies. Heather had lots of folks asking if she had some more allergy-free options, like nut-free, egg-free, low-carb, or coconut-free muffins. And she has delivered with 20 new recipes – 15 of the recipes are nut-free, 9 of the recipes are low-carb, 8 of the recipes are egg-free, and 8 of the recipes are coconut-free. Hooray! We made a number of the recipes in this ebook, including the low carb sandwich bread and vanilla donut. A couple we loved were the apple crumble and avocado brownie. Our favorite was the banana bread muffin. Holy moly! That little mug muffin is freakin delicious!

Heather gave us permission to share our favorite recipe with you. It was so easy to mix up and get in the microwave, and then it had a great combination of savory and sweet notes to satisfy our evening sweet tooth. We both finished up our little ramekin (yes, we shared one) and sat on the couch with  smiles on our faces, kind of wanting just a little more! I mean come on…we shared one little ramekin! Banana Bread Muffin - Mug Muffins 2 Recipe


  • 1 banana
  • 1 tablespoon coconut oil, - solid
  • 2 tablespoons coconut milk
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons coconut flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon baking soda, (I only used a big pinch)


  • Mash the banana and add the coconut oil, coconut milk, and vanilla.
  • Add the cocoonut flour, cinnamon, and baking soda; mix well.
  • Transfer to a ramekin or coffee cup.
  • Microwave on HIGH (100 percent power) for 3 minutes.
  • Cool a bit and enjoy.
