No eggs, nuts or refined sugar
We love this edible cookie dough recipe because it’s super easy to make, and it’s healthier than the average edible cookie dough. Of course, there are no eggs and that makes it edible and no bake. Then, we used cassava flour to keep it nut-free and pure maple syrup to ditch refined sugars. The magic comes from the coconut butter though. It makes the texture just right and adds this buttery flavor without any added dairy.
What if I don’t have coconut butter?
Here’s the deal. Coconut butter is freaking delicious! If you haven’t tried it yet, you are missing out! I especially love it for treats like this edible cookie dough. Butttttt…The problem with coconut butter is that it’s kind of spendy. The good news though…you can make coconut butter! It’s SO easy to make! All you need is shredded coconut and a food processor.
Tips for making coconut butter
Start to finish, making coconut butter takes about 5-10 minutes. All you do is add shredded coconut to your food processor and let it run. A few minutes in, the sound the blade makes as it spins will change. Stop the food processor and scrape down the sides. Then restart, letting it run until you hear the audible change again. Stop the food processor and scrape down the sides. Rinse and repeat until the coconut turns into a velvety texture. It will be real creamy and smooth. If your coconut is too dry (has been sitting in the pantry for a while), and it won’t seem to turn into coconut butter, just add about a tablespoon of coconut oil and continue processing until smooth and creamy.

Healthy Cookie Dough (Edible, Paleo + Vegan)
Ingredients
- 1/4 cup + 2 tbsp Otto's Naturals – Cassava Flour, (whisk in the bag before measuring)
- 1/4 cup maple syrup
- 2 tbsp coconut butter, softened
- 1/4 tsp sea salt
- 1/2 cup chocolate chips, (optional, we used 100% cacao chips from the brand Pascha on Thrive Market)
Instructions
- Combine all of the ingredients, except chocolate chips, in a medium mixing bowl with a spoon.
- Fold chocolate chips into the dough.
- You can leave as is or form into balls. Store in the fridge and enjoy a bite for a little treat!
Actually a question :). Â Do you have to heat treat the flour in order for it to be safe for raw consumption like you with regular flour?
No you do not.
Can I bake if yes how long on temperature?Â
I haven’t tried baking this one since I just created it as an edible dough recipe. If I were going to try, I’d probably do about 10 minutes at 350 degrees. I’d be curious to hear how it goes if you try.
