How to make grilled chicken thighs (step-by-step)
Ingredient notes
- Chicken Thighs – Absolutely use chicken thighs over breasts for more flavor and juicier chicken.
- Coconut Aminos – These are a soy sauce alternative. You can use Braggs Aminos or soy sauce if that’s what you have on hand.
- Coconut Sugar – We prefer an unrefined sugar, but brown sugar works too.

Quick (No Marinade!) Grilled Chicken Thighs
Ingredients
- 2 lbs boneless skinless chicken thighs
- 1 tbsp coconut aminos, (can sub soy sauce)
- 1 tbsp fish sauce, (can sub soy sauce here too)
- 1 tbsp olive oil
For the seasoning:
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp chili powder
- 1 tsp coconut sugar, (can sub brown sugar, but omit for Whole30)

Instructions
- Heat your grill to medium high heat.
- Make the seasoning mix by combining the spices together in a small bowl.
- Add the chicken to a bowl. Add in the coconut aminos, fish sauce and oil and toss to coat the chicken.
- Sprinkle the seasoning all over the chicken and toss to coat the chicken pieces with the seasoning.
- When the grill is hot, add the chicken to the grill. Cook about 6-8 minutes on each side depending on the size of the chicken thigh pieces. The chicken thighs are fully cooked when they reach 165° internal temperature but can be cooked up to 175° – 180° and still taste great.
