How to make our favorite herby, lemony sauce (step-by-step)


Recipe testing notes
- It’s lemony! – As the name suggests, this sauce is quite tart and lemony. That’s how we like it! If you don’t want the lemon flavor to be as strong, you can start with half the amount and add more after tasting.
- Avocado oil – Avocado oil is one of the best oils to use for this recipe as it’s neutral in flavor. If you substitute any other oil, use one that is light and fairly neutral in flavor, like a light olive oil.
- Fresh herbs – Using fresh herbs is a must for this recipe. It will not be the same if you substitute dried herbs.
- Salt – A hefty dose of salt is necessary to balance out the acid (lemon) in this sauce. If you are sensitive to salt you can start with less and add more to suit your taste.

It’s perfect for chicken, fish and more!
We first made this as a sauce to go with steak, but discovered that it was even better with chicken and fish!
It’s good with steak, don’t get me wrong, but somehow the flavor just pops more with more neutral protein like grilled chicken thighs or a white fish like halibut, tilapia or over some blackened mahi mahi.
It’s also pretty amazing on some perfectly juicy pork chops.

Lemony Herb and Oil Sauce for Chicken, Fish & More
Ingredients
- 2 medium lemons, juice of, (1/3 cup of lemon juice)
- 1/4 cup avocado oil, (or light olive oil)
- 1 cup parsley
- 1 cup basil
- 1 sprig fresh rosemary, (small sprig)
- 1 tbsp fresh thyme leaves
- 1 shallot, peeled, (small shallot)
- 2 cloves garlic
- 1.25 tsp salt
- 1 tsp pepper
Equipment
- Blender or food processor
Instructions
- Add all of the ingredients to a food processor or high-powered blender. Process/blend for 30-45 seconds, or until the sauce is mostly smooth.
