This lemon-lime bbq chicken is about as easy as it gets for a complete and simple grilled meal. The citrus flavors blend well with the smoky grilled vegetables and everything cooks on the hot grill in about 10 minutes.

First, fire up your grill and get it good and hot. Season up the chicken breasts on both sides with the garlic, paprika and salt and pepper and top with the lemon and lime wedges.

Next, chop up your veggies and coat them with the olive oil, garlic powder, and salt and pepper.

Place the veggies on a grilling pan and you are ready to grill.

When your grill is ready, place the lemon-lime chicken on one side of the grill to cook, leaving room for the grilling pan on the other side and cook for about 5 minutes.

Flip the chicken over to cook on the other side and top with some additional lemon and lime slices. Add your veggies to the grill and cook the other side of the chicken and veggies about 5 minutes, stirring the veggies at least once to char and cook evenly.

Remove the chicken and grilled vegetables from the grill.

LEMON-LIME BBQ CHICKEN

Ingredients

For the chicken:

  • 2 boneless skinless chicken breasts
  • 2 lemons
  • 1 lime
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • Salt + pepper

For the grilled veggies:

  • 2 cups mushrooms
  • 5-6 carrots, - sliced into chunks
  • 2 stalks of baby broccoli (or regular broccoli)
  • 2 tbsp olive oil
  • 1-1/2 tbsp garlic powder
  • Salt + pepper

Instructions
 

  • First, fire up your grill and get it good and hot.
  • Next, place your chicken on a plate for seasoning. Slice one lemon in half and squeeze the juice of one of the halves over the chicken on both sides. Season the chicken breasts on both sides with the garlic, paprika and salt and pepper.
  • Slice the remaining lemon and lime up and place the slices on top of the chicken (reserving half of the slices for when you flip the chicken on the grill). The chicken is ready to go.
  • Now, chop up your veggies to the size of your liking, place them in a bowl to toss and coat with the olive oil, garlic powder, and salt and pepper. Place the veggies on a grilling pan.
  • When your grill is good and hot, place the chicken on one side of the grill to cook, leaving room for the grilling pan on the other side. Cover and let the chicken cook on one side about 5 minutes.
  • Next, pull off the lemon and lime slices with tongs and flip the chicken to cook on the other side. Top the chicken with the remaining lemon and lime slices.
  • Add your veggies to the grill to cook. Cook the other side of the chicken and veggies about 5 minutes, stirring the veggies at least once to char and cook evenly.
  • Remove the chicken and grilled vegetables from the grill.
  • Serve and enjoy.
