Ingredient notes
Pork chops – Thicker cuts are best for juicy chops, so I suggest using bone in pork chops that are at least 1 inch thick for this recipe.
Add a quick side – You can easily add in another sheet pan with the pork chops to roast some veggies for a side dish. Just pick veggies like broccoli, cauliflower or brussels sprouts that will cook in about 30 minutes.
The seasoning – You might want to make more of the seasoning after trying it, so go ahead and use it on chicken or steak too :).
Tips from an expert home chef
- Don’t skip the resting step. Allow the chops to rest for a full 5 minutes to retain the juices in every bite!
- If you want a little brown crust on the outside of the pork chops here are two options:
- Sear them in a hot pan for 1-2 minutes on both sides before putting them in the oven.
- Turn the oven to broil at the end of cooking to brown the chops at the end.
If you do either of these, reduce the baking cook time by 4-5 minutes so the chops don’t try out.

Easy (and Juicy!) Oven Baked Bone In Pork Chops
Ingredients
For the pork chop seasoning:
- 1 tsp chili powder
- 1 tsp coconut sugar, Omit for low carb or whole30. Can sub another sweetener of choice.
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 1 tsp ground mustard
- 1 tsp sea salt
- 1/2 tsp onion powder
- 1/2 tsp pepper
For the baked pork chops:
- 4 bone in pork chops, (about 1.5 inches thick, see recipe notes)
- 4 tbsp olive oil, (or other cooking oil of choice)
Instructions
- Preheat oven to 400° Fahrenheit and grease a baking pan with oil or line it with parchment paper.
- Make the seasoning mix by combining the seasonings in a small bowl and mixing.
- Place the pork chops on the baking pan and drizzle oil over each pork chop. Rub (or brush) the oil over both sides of the pork chops.
- Season the pork chops on both sides with the seasoning mix.
- Place the pork chops in the oven to bake for 25 minutes, or until the pork chops reach a temperature of 145° Fahrenheit.
- Carefully remove from the oven and allow the pork chops to rest for 3-5 minutes before serving.
Notes
- The cooking time of 25 minutes in this recipe is for bone-in pork chops that are approximately 1.5 inches thick. The cooking time will vary based on the size of your pork chops and your oven. Use this time recommendation as a starting point and adjust as needed. Watch your pork chops carefully during cooking to avoid over or under-cooking them. I highly recommend using an instant-read thermometer.
- As a general rule of thumb, bone-in pork chops need to cook for about 8-10 minutes per ½ inch of thickness in a 400° Fahrenheit preheated oven.

This recipe is the only recipe I use to bake pork chops. They come out amazing every time. I also cut up carrots and onions and sweet potatoes, and toss them with olive oil and the seasonings and put them right on the same pan with the pork chops… add a salad and you’ve got dinner.

I have to admit I was a total doubter. I thought this was going to be yet another baked pork chop recipe promising juicy pork chops, but getting dry, chewy, awful pork chops. I WAS WRONG!!! These pork chops are so so so good! I didn’t have chili powder, but I looked on the internet to what I could do, and I did have all the ingredients to make my own chili powder, and it worked great. Oh my gosh, these pork chops were so tasty and juicy! I have two left over from last night and I’m counting the minutes until dinner tonight! Thank you!!!
P.S. Also, I cannot eat gluten, so it was so great to find a recipe that doesn’t have any kind of flour in it (I don’t love any substitutes for wheat flour).

I made this last night and it was awesome. My husband commented on how juicy the meat was. I made it exactly as stated in the recipe, except that I omitted the sweetener completely. The chops were 1 1/2″ and cooked to 145 degrees in the 25 minutes recommended. Thanks.

It was delicious. Seasoning was well received by fam. Left out sugar and used Dijon mustard to substitute for ground mustard. I spread mustard on chops, then sprinkled chops with reasoning. But I can taste why you add coconut sugar.. to give a little balance. Next time I’ll add it. Family still liked it and enjoyed it without coconut sugar. Lol

I have googled and tried so many online cooks recipes for ” Tender and Juicy” pork chops but they always disappointed. I actually gave up making bone in pork chops because they never came out tender and juicy until I decided to try one more time for my son and husbands sake because they love pork chops. The spice blend for pork chops is PERFECT. I halved the recipe for only 2 chops. But HOLY SCHMOLY 😍 . I had my chop on a bed of sour cream mashed potatoes and made a gravy from the drippings. I’m in heaven!

I just posted a review and forgot to add that I cut up carrots and onions and sweet potatoes and white potatoes and tossed them with olive oil and seasoning and put them between the two pork on the same pan. All I had to do was add a salad!!

First time using this recipe, and they came out perfect! I used bone-in pork chops that I buy from my local farmer at the farmers market. I used brown sugar for the sweetener. I did not have the mustard. These pork chops were so moist and so delicious. Looking forward to having them again!

Yes, you have to watch them carefully at the end and pull at the 145° recommended or they can overcook quickly.

FANTASTIC!!! I subbed brown sugar for coconut sugar, and kosher salt for sea salt b/c that’s what I had. My chops were not thick – maybe 3/4-inch. 13 minutes at 400, then under broiler for 4 more minutes. They were PERFECT and tender, juicy, and tasty. LOVE this recipe.

With this recipe it’s not necessary. If you don’t overcook pork chops they turn out nice and juicy and the seasoning mix will give you plenty of flavor.

This is a SUPERIOR RECIPE! I didn’t have dry mustard, but used Tumeric instead. Also like a Lil mo heat, so I added 1/2 teaspoon of chili powder! Thanks for this D-Licious recipe!

I just used the recipe for reference in how long to cook bone-in pork chops in an oven, I just used my own creation of lemon preserves and worstchester sauce. I’m sure this recipe will be marvelous and I’ll try it next time I cook chops.
Very pleased with the pork chop. Moist and flavorful. I pan-seared the chops for 2 mins on each side before applying the rub and baking. This is a very important step to look and texture. I enhanced the rub with a few additional spices. The time and temp turned out perfect.

I was looking for an easy pork chop recipe to have for dinner last night. I saw this, read the reviews and decided to go for it. I wasn’t excited about the chili powder in the spices but went with the rub as printed only changing the coconut sugar to brown sugar and adding some garlic powder. I could not believe how moist, juicy and flavorful they were. The chili powder was good in the rub. I will definitely Pin this recipe and add it to my rotation.

Ok. So I’m going to be the only one not raving. These were VERY juicy and tender. Five stars for that. However my husband and I both agree the seasoning was bland. I followed the recipe exactly. I rubbed the seasoning in a little. It apparently wasn’t quite enough. Maybe I’m missing something.
