Ingredient notes
Pork chops – Thicker cuts are best for juicy chops, so I suggest using bone in pork chops that are at least 1 inch thick for this recipe.
Add a quick side – You can easily add in another sheet pan with the pork chops to roast some veggies for a side dish. Just pick veggies like broccoli, cauliflower or brussels sprouts that will cook in about 30 minutes.
The seasoning – You might want to make more of the seasoning after trying it, so go ahead and use it on chicken or steak too :).
Tips from an expert home chef
- Don’t skip the resting step. Allow the chops to rest for a full 5 minutes to retain the juices in every bite!
- If you want a little brown crust on the outside of the pork chops here are two options:
- Sear them in a hot pan for 1-2 minutes on both sides before putting them in the oven.
- Turn the oven to broil at the end of cooking to brown the chops at the end.
If you do either of these, reduce the baking cook time by 4-5 minutes so the chops don’t try out.

Easy (and Juicy!) Oven Baked Bone In Pork Chops
Ingredients
For the pork chop seasoning:
- 1 tsp chili powder
- 1 tsp coconut sugar, Omit for low carb or whole30. Can sub another sweetener of choice.
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 1 tsp ground mustard
- 1 tsp sea salt
- 1/2 tsp onion powder
- 1/2 tsp pepper
For the baked pork chops:
- 4 bone in pork chops, (about 1.5 inches thick, see recipe notes)
- 4 tbsp olive oil, (or other cooking oil of choice)
Instructions
- Preheat oven to 400° Fahrenheit and grease a baking pan with oil or line it with parchment paper.
- Make the seasoning mix by combining the seasonings in a small bowl and mixing.
- Place the pork chops on the baking pan and drizzle oil over each pork chop. Rub (or brush) the oil over both sides of the pork chops.
- Season the pork chops on both sides with the seasoning mix.
- Place the pork chops in the oven to bake for 25 minutes, or until the pork chops reach a temperature of 145° Fahrenheit.
- Carefully remove from the oven and allow the pork chops to rest for 3-5 minutes before serving.
Notes
- The cooking time of 25 minutes in this recipe is for bone-in pork chops that are approximately 1.5 inches thick. The cooking time will vary based on the size of your pork chops and your oven. Use this time recommendation as a starting point and adjust as needed. Watch your pork chops carefully during cooking to avoid over or under-cooking them. I highly recommend using an instant-read thermometer.
- As a general rule of thumb, bone-in pork chops need to cook for about 8-10 minutes per ½ inch of thickness in a 400° Fahrenheit preheated oven.

The most tasteless chops I’ve ever had. The spice rub is enough for maybe two and that’s pushing it. I suggest everyone at least double the spice rub if you’re making four.
If you doubled the recipe, you’d get 14 tsp of seasonings for 4 chops. I don’t recommend that! That equates to over a full tablespoon of seasoning on each chop.
Excellent. I used super thick butcher cut chops. Only change I made was to drop the mustard powder and glaze the chops with actual dijon.
Married for 57 years and I never could make a decent Pork Chop meal. The chops were always dried out, tough, with no taste. This recipe is great! This is now my go-to recipe for great tasting Pork Chops.

This recipe was surprisingly delicious only because it’s so easy to make! Cooked 1” thick chops for 22 minutes and let rest for 5 minutes, used the juices as an au jus dip. Put zucchini, peppers and onions on the same tray and every came out cooked perfectly.

This is one of the best recipes I’ve ever made for pork chops. I made this recipe last night, and they turned out fabulous! I had thick pork chops, so I baked them for about 30 minutes. Also, I didn’t have any dry mustard so after brushing on the oil, I brushed on some Grey Poupon. Then I added the seasonings. Perfection!

Recipe sounds delicious and I plan on making it for dinner today. Have you ever seasoned them a few hourse before baking and let them sit in the fridge until ready to cook? If so, how’d they come out? I’ve seen other recipes that use a dry rub and let the chops sit in the rub for a few hours.

Thanks! I let them sit in the fridge, seasoned, for about an hour or so and then let them come to room temperature for about 15 minutes before putting them in the oven. They came out absolutely awesome…easily the best oven-baked chops I’ve ever made (or had)! Thanks for a great keeper recipe!

Best pork chop I ever had in my 68 years. I already had my house seasoning on it . Which is salt, pepper, garlic powder with parsley.. I Did add chili powder and onion powder. I left it in 25 minutes with roasted cauliflower and carrots very good

I only have one oven and wish to have brown rice and glazed sweet potatoes as some of my sides to go with pork chops. Can these be made one hour ahead and kept covered til sides ready? Reviews are wonderful and I’m so excited to try recipe.
I would cook the sides first and cover them the keep warm while you cook the pork chops. You want the pork chops fresh they won’t turn out great sitting for that long.
These Pork Chops are the best I have ever made. The spices were perfect. I did use brown sugar since I did not have coconut sugar. Melt in your mouth perfect. I complimented the main dish with Rosemary roasted potatoes and beet salad.

I made this today with 8 thin cut bone-in pork shoulder cuts. They were about .5-.75in thick. I, of course doubled the seasoning, although there was a little left over after seasoning both sides of the chops. I baked them at 400 degrees but for only 15-20 minutes. Then let them sit for 10 minutes. They were juicy and delicious! Paired it was steamed spinach, jasmine rice and baked beans. Fam loved it.

This recipe was so delicious! I’m not much of a cook, but I was so proud of myself after I made this with au gratin potatoes and mixed vegetables. My pork chops were only 1/2 inch thick, so I only cooked them for a little over ten minutes. I loved the rub, and they were juicy just like they said. I will definitely be making these again!
Excellent flavor. My husband and I loved them. The perfect amount of salt. I used 1” thick, bone in pork chops. I checked them after 20 minutes and they were done. Also let them sit for the full 5 min.
Absolutely excellent! So moist & flavorful. Followed your recipe except for the coconut sugar, didn’t have on hand. My chops were about an 1″ thick baked for 20 minutes, broiled for 2 minutes, rested for about 3 minutes. Think the parchment is key to keeping all the juices which I poured over the chops. Will make again!!
I was looking for a good oven-baked bone-in pork chop recipe that i could do in my air fryer/toaster/bake/broil oven when I ran across this. The recipe is easy and it turned out to be delicious. My chop was quite thick but it turned out nice & moist.
I also appreciated that although the recipe was for 4 pork chops you have place that will change the measurements if ng more or fewer chops.. This is a keeper!
