Simple Ingredients – Only 5 Of Them!
This sweet potato porridge only requires a handful of ingredients, and once the sweet potatoes are baked to perfection, all that’s left to do is mix everything up and add some toppings. It’s really that easy! Beyond the 5 ingredients listed in the recipe, you could also switch up the toppings and add whatever sounds good to you!
Collagen vs. Gelatin
The difference between the two is the water-solubility. Hydrolyzed collagen is soluble in both hot and cold water, whereas gelatin is only dissolves in hot water. Then, once cooled gelatin gets gummy, like jello.

Simple Sweet Potato Porridge (Paleo)
Ingredients
- 4 sweet potatoes
- 4 tbsp collagen
- 1/2 cup unsweetened shredded coconut
- 1.5 cups fresh or frozen berries
- 3/8 cup almond butter
Other topping ideas:
- coconut milk
- Pumpkin seeds, (any nuts or seeds really)
Instructions
- Preheat oven to 425° Fahrenheit.
- Use a fork to poke holes in sweet potatoes. Then, line a baking sheet with foil and place it on the bottom rack of your oven. Place sweet potatoes directly on the rack right above your baking sheet. The baking sheet is just to catch any drippings from the sweet potatoes. Bake for 45 minutes.
- Once sweet potatoes are cooked, remove from oven and let cool. Once cooled cut in half lengthwise. Scoop our the flesh and place in a mixing bowl. Add collagen and shredded coconut. Mash and mix with a fork.
- Cover and store in the fridge. When you're ready to eat just reheat, top with berries, almond butter and any other toppings you like.
What a great recipe. I was looking for a paleo breakfast but it’s always some variation of the same old thing. This is original, healthy and oh so delicious. It makes enough for five portions for me. I added 2 T of hemp hearts to increase the oat-like texture, and used vanilla collagen protein powder along with a 1/4 t of vanilla extract.
Next morning I warmed it up, stirred in a t almond butter and topped it with plain plant-based yogurt and sunflower seeds. Filling and fantastic. If you eat eggs, you can add a poached egg on top, which is also delicious and ups the protein.

Doing a Whole 30 this month – and as much as I love eggs I needed a break. This is the best idea I’ve run across in a LONG time! I added pumpkin seeds, almond butter, fresh raspberries, almond milk… Gorgeous flavors and my tummy is very, very happy. Thank you!!

Hi! What purpose is the shredded coconut for, and what texture does it have after sitting in the mash for a day? I like most coconut things, but not the texture of shredded coconut. Does it soften, and if not, do you have any alternatives for it? Thanks!
Hi there! The shredded coconut is help give it a texture more like an oatmeal or porridge. It does soften a bit after sitting for a day, but it still has a bit of a coconut texture. You could leave the coconut out if it’s a texture issue and try either some chopped up nuts or hempseed instead. Let us know how it goes if you give it a try!

Yummy. Really like. I add coconut yogurt alternative along with almond milk, fresh fruit, some almond butter and roasted pumpkin seeds. Very filling.
The one meal I have struggled with since having a list of my food sensitivities given to me, is breakfast. I loved greek yogurt, eggs, and toast. All of those things are off limits. I was skeptical of this, but I went for it. OH MY GOSH! I can’t even begin to tell you how good this was. I drizzled honey over the top of it, too. I posted it on my IG and some people reached out for the recipe because it looked so delicious.

Hi Sandra, as part of our real food/paleo lifestyle we don’t track any nutrition information personally, and it has been really liberating for us and helped us find food freedom. For that reason we don’t post the nutrition info on our recipes, with the only exception being the Keto specific recipes on our site. You could plug the ingredients into an online nutrition calculator if needed though.

Hey there – I’d go with about 2 cups per sweet potato or 8 cups in total. You can also half or quarter depending how much leftovers you want for make ahead breakfasts. Hope that helps! Enjoy! 🙂
