This is Our Slow Cooker

There are plenty of slow cooker options out there, but below is the one we have used for years.

Here’s why we like it:

  • It’s fairly inexpensive
  • You can lock the lid for easy transport
  • Once the cooking time is up, it switches to a “keep warm” setting

Why Slow Cooking is the Best

We use our crockpot all the time, and here are the reasons we love it.

  • Set & Forget – A little prep goes a long way. Most of these recipes require only prepping the main ingredients and cooking them on low or high for 4 to 8 hours.
  • Batch cook & meal prep – We cook a lot, so we try to batch cook and meal prep when we can. The crockpot is great for cooking a big batch of meat or soup that you can have for leftovers.
  • Slow and low is the way to go – I love our Instant Pot, but I really prefer cooking things like beef and pork roast in the slow cooker. The low heat gives you the perfect fall apart, shreddable meat every time.
  • Easy cleanup – Since you’re cooking everything in one pot, that’s all you have to clean!

A Note On the Instant Pot

In this listing, many of the recipes can be made in either the Instant Pot or slow cooker. If the recipe title notes that it is an Instant Pot recipe, the slow cooker instructions will also be included in the recipe card.

Feel free to use either option and go with whatever works for you.

Ingredients

  • 1.5 lbs boneless skinless chicken thighs
  • 1 can fire roasted crushed tomatoes (14.5 oz can)
  • 1 bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 cups bone broth
  • 1/2 cup water
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 tsp oregano
  • 1/2 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1/2 tsp ground pepper

For garnish:

  • 1 avocado
  • fresh cilantro

Instructions 

  • Prepare all of the ingredients as noted above, and add all of the ingredients, except for the garnish ingredients, into your crockpot or Instant Pot in the order listed above. 
  • Cook on low for 6-8 hours in the crockpot or on high for 3 hours. For the Instant Pot, cook for 20 minutes on the manual setting at high pressure with a quick release. Once done, use two forks to shred chicken in the crockpot. Ladle into bowls and serve with avocado and fresh cilantro.
