Meal prep never tasted so good! This Paleo + Whole30 ramen noodles in a jar recipe is the perfect way to prep healthy lunches for the work or school week!
Heat a large pan over medium heat and add pork and season with salt and pepper. Cook, stirring occasionally, until the pork is almost cooked through, about 6-7 minutes.
While the pork is cooking, prepare the onions, garlic, ginger, cruciferous veggies and carrot as noted. Turn zucchini into zoodles using a spiralizer.
When the pork is almost browned, add in the white part of the green onions, garlic and ginger. Stir and cook for 1-2 minutes. Remove from heat.
Mix the coconut aminos, apple cider vinegar, fish sauce and beef broth together in a large bowl or pourable container
Prepare your mason jars. Layer the ingredients in 4 wide mouth pint jars in this order. Pork, cruciferous veggies, green onions, then zoodles.
Pour the broth into four separate pint jars (distribute evenly). About a 3/4 full pint jar will fill the ramen noodles jar.
For serving, all you need to do is heat up the broth mixture on the stove or in the microwave. Pour the hot broth into the zoodle jar and let it sit for 1-2 minutes. Stir to mix the ingredients and enjoy your healthy ramen zoodles!
