Combine everything, except for the chia seeds and toppings, in a mason jar with a whisk.
Add in the chia seeds, cover the jar and give it a good shake. Let it settle and sit for a few minutes and then shake it again. Continue this pattern of shaking and waiting until the chia seeds start to absorb the liquid and expand. They will look evenly dispersed through the liquid when it's ready to set in the fridge.
Give everything one final shake and transfer to the fridge overnight to set. The pudding should be ready in about 30 minutes if you need a quicker option.
When you're ready to eat, layer on all the toppings and enjoy!
