This juicy and buttery cast iron skillet chicken breast is perfectly browned and seasoned. Seared in the skillet and roasted in the oven to lock in the juices, this easy recipe is the gold standard for cooking chicken breasts. Spoon the buttery sauce over everything for serving.
Make the seasoning by combining all of the seasoning mix ingredients in a small bowl and mixing well.
Season the chicken breasts on all sides with the seasoning mix.
Heat a large cast iron skillet over medium heat and add ghee. Once the pan is hot and shimmering, add the seasoned chicken breasts.
Cook the chicken breasts for 2-3 minutes without disturbing. Then, flip the chicken and cook for another 2-3 minutes. Remove from heat and place 1 tbsp of ghee (or butter) on top of each piece of chicken.
Carefully transfer the chicken to the preheated oven. Bake the chicken breasts in the oven for 15-25 minutes, or until the internal temperature reaches 165° Fahrenheit. Note: We recommend using an instant read thermometer to check the internal temperature of the chicken for this recipe. Sizes of chicken breasts vary widely and smaller breasts will be fully cooked in around 15 minutes and larger breasts may take the full 25 minutes.
Once the chicken is fully cooked, carefully remove it from the oven. Spoon some of the buttery juices from the pan over the chicken for serving.
