1 1/2tbspCajun spice mix(you can use a store-bought Cajun seasoning if you have it just make sure it is clean, sugar-free, and your desired level of spiciness. Or, you can make your own - see ingredients below)
3/4poundmedium shrimp- peeled and deveined, tails removed
In a medium bowl or dish, season shrimp with spice mixture and toss to evenly coat.
In a large skillet over medium-high heat, add 1 tbsp oil. Once hot, add seasoned shrimp and sauté until the shrimp turn pink, about 2-3 minutes. Remove from heat and set aside.
Now, create your salad. Fill a plate with greens and arrange Cajun shrimp, onion, tomatoes and avocado in separate rows.
Drizzle with oil and a liberal squeeze of lime juice. Serve and enjoy.
