These easy ground pork stuffed peppers are a flavorful dinner the whole family will love and it's ready in only about 30-minutes! Mix and match peppers and use whatever rice your family prefers.
Prep onion and garlic as noted, and make sure your rice is cooked as well.
Heat a skillet to medium and add ground pork, onion and garlic. Break up the ground pork and cook stirring occasionally until it starts to brown, about 7-8 minutes.
While the pork is cooking, prep the bell peppers. Cut the tops off and remove seeds. Set aside.
Once the pork is about done, add Italian seasoning, sea salt, marinara sauce and cooked rice to the skillet. Stir to combine and then turn off the heat.
Scoop the filling mixture evenly into the prepped bell peppers, and place them in a baking dish. Store any excess filling in an airtight container in the fridge.
Transfer baking dish to oven and cook for about 15 minutes, until the bell peppers soften. With about 2-3 minutes left to cook, add shredded cheese to the top of each pepper if you'd like. Once done, remove and garnish with chopped parsley or basil. Enjoy!
