How to make these easy ground pork stuffed peppers

Cook ground pork, onion and garlic until the pork starts to brown, about 7-8 minutes.

While the pork is cooking, prep the bell peppers. Cut the tops off and remove seeds.

Once the pork is about done, add Italian seasoning, sea salt and cooked rice.

Pour the marinara sauce over everything.

Stir to combine and then turn off the heat.

Scoop the filling mixture evenly into the prepped bell peppers, and place them in a baking dish.

Transfer baking dish to oven and cook for about 15 minutes, until the bell peppers soften.

With about 2-3 minutes left to cook, add shredded cheese to the top of each pepper if you’d like.

Once done, remove and garnish with chopped parsley or basil. Enjoy!

Recipe tips

  • Don’t overcook the peppers in the oven. We’ve ended up with watery peppers before. Our tested and recommended cooking time is no more than 15 minutes in the oven to avoid mushy peppers.
  • Make your rice prior to starting this recipe. I prefer to make the rice the day before. Then, I just grab it from the fridge when it’s time to add it to the skillet. It makes clean up feel like a breeze, too!
  • If you plan to use cauliflower rice instead of regular white or brown rice, I recommend not cooking it all before adding it to the skillet. It will get enough cook time in the oven and then you avoid it getting mushy.

30 Minute Ground Pork Stuffed Peppers

These easy ground pork stuffed peppers are a flavorful dinner the whole family will love and it's ready in only about 30-minutes! Mix and match peppers and use whatever rice your family prefers.

Ingredients

  • 1/2 onion, diced
  • 1 clove garlic, minced
  • 1 lb ground pork
  • 6 bell peppers, or the equivalent of any other kind of pepper you love
  • 1 tbsp Italian seasoning
  • 1/2 tsp sea salt
  • 1 jar sugar free marinara, 25oz jar
  • 2 cups cooked rice

Optional garnishes:

  • Chopped parsley and/or basil
  • Grated cheese

Instructions
 

  • Preheat oven to 375° Fahrenheit.
  • Prep onion and garlic as noted, and make sure your rice is cooked as well.
  • Heat a skillet to medium and add ground pork, onion and garlic. Break up the ground pork and cook stirring occasionally until it starts to brown, about 7-8 minutes.
  • While the pork is cooking, prep the bell peppers. Cut the tops off and remove seeds. Set aside.
  • Once the pork is about done, add Italian seasoning, sea salt, marinara sauce and cooked rice to the skillet. Stir to combine and then turn off the heat.
  • Scoop the filling mixture evenly into the prepped bell peppers, and place them in a baking dish. Store any excess filling in an airtight container in the fridge.
  • Transfer baking dish to oven and cook for about 15 minutes, until the bell peppers soften. With about 2-3 minutes left to cook, add shredded cheese to the top of each pepper if you'd like. Once done, remove and garnish with chopped parsley or basil. Enjoy!
