Paleo Elk Chili

Ingredients

For the chili:

  • 2 lb ground elk (or beef or bison)
  • 1 lb spicy Italian sausage
  • 1 leek or medium onion - chopped
  • 3 cloves garlic - minced
  • 3 14.5 oz cans organic diced tomatoes
  • 1 6 oz can tomato paste
  • 2 tbsp chili powder
  • 1 tbsp pepper
  • 1 tbsp smoked paprika
  • 1 tbsp cumin
  • 1 tsp salt
  • 1 tsp cayenne pepper

Optional toppings:

  • Chopped onion
  • Avocado
  • Olives
  • Diced tomato

Instructions

  1. Place all of the chili ingredients in the crockpot.
  2. Mix everything together well with a spoon to distribute the spices evenly.
  3. Cook on low for 8 hours.
  4. Scoop into a bowl and add on any toppings you want. Enjoy!
