4cod fillets, of similar size(or sub tilapia, red snapper, halibut)
1green onion, chopped
2cupsrice(optional - omit for Whole30 or Keto)

Instructions
Cut up bell pepper, onion, jalapeño, garlic and olives as noted.
Place a large skillet over medium heat. Add in bell pepper, onion, jalapeño, garlic, olives, tomatoes, marinara sauce, capers, oregano and a large pinch of salt and pepper. Stir and mix well.
Cook, stirring occasionally, until the vegetables are tender and the sauce is starting to bubble, about 5 minutes.
Season both sides of cod fillets with salt and pepper and place on top of the sauce. Spoon some of the sauce on top of the cod. Cover with a lid and continue to cook on the stove over medium heat for about 5–6 minutes, or until fish flakes easily with a fork.
Serve fish with just the sauce topped with green onion or you can also serve over rice.
