Chicken thighs are seasoned with a homemade Jamaican-style jerk dry rub and slow-cooked in a crockpot until the meat is fall-off-the-bone tender and so juicy! An easy slow cooker dinner recipe that gives you jerk chicken with minimal time and effort.
Make the seasoning by adding all of the seasoning ingredients to a small bowl or jar and mixing. Rub the seasoning mix on both sides of the chicken.
Heat a large skillet over medium heat and add ghee. Once hot, add in the chicken, skin side down to cook undisturbed for 3-4 minutes. Flip and cook on the other side for another 2-3 minutes. Transfer chicken to the slow cooker.
While the chicken is cooking, add the coconut aminos, chicken broth, lime juice and molasses to a small bowl. Whisk to mix.
Pour the broth mixture in with the chicken. Place the lid on the slow cooker and set to cook on high for 3 hours or on low for 6 hours.
Carefully remove the chicken and serve. If desired, pour some of the juices from the slow cooker over the chicken when serving.
