I’m not quite sure how Thanksgiving arrived so fast! Luckily, you will probably have plenty of leftovers to keep the cozy feelings alive for a while longer, and we’ve got a leftover turkey stir-fry to keep you from getting bored. It is vibrant in both color and flavor, with a little bit of kick to keep things exciting!

We love how this leftover turkey stir-fry transforms Thanksgiving leftovers into a colorful bowl of veggies and flavors in such a short amount of time. We used red and yellow bell peppers to go with the green broccoli. Leftover Turkey Stir-fry (Paleo, Whole30 + Keto)

Ingredients

  • 3 cloves garlic - minced
  • 2 cups broccoli - cut into small florets
  • 2 bell peppers - seeds removed and sliced into strips
  • 3 cups cooked turkey - cut or shredded into bite-sized pieces
  • 1 tbsp avocado oil
  • 2 tbsp coconut aminos
  • 1 tbsp fish sauce
  • 1 tbsp hot sauce (optional)

Instructions

  • Cut up garlic, broccoli, bell peppers and turkey. 
  • In a large skillet or wok over medium-high heat, add avocado oil. Once hot add in vegetables and stir-fry for 3 minutes. 
  • Next, add in turkey, coconut aminos, fish sauce and hot sauce. Stir together and continute cooking another 2-3 minutes until the turkey is warmed and the vegetables are starting to soften. 
  • Remove from heat and serve immediately. Enjoy!
