Sometimes I have to remind myself of the KISS principle – both in life and in cooking.
Duh.
Remind yourself of this saying when you are overthinking or overcomplicating something unnecessarily. That’s exactly what I did when it came to making this dish. I kept wanting to add more ingredients and I had to stop myself.
So, this is exactly what I did to make this salad. I went and picked a few cucumbers out of the garden. I chopped them up and added just two more ingredients – red onion and avocado. Toss in a pinch of salt and pepper and in just minutes we were enjoying a fresh and crunchy summer side dish.
Remember – simple is better.
Go make this – NOW! Eat up those fresh cucumbers while they are in season.

Simple Cucumber Salad
Ingredients
- 4 medium pickling cucumbers, (or about 1-1/2 english cucumbers)
- 1/2 red onion, - chopped
- 1 small avocado, - sliced into small chunks
- Pinch of salt and pepper
Instructions
- Chop up all of the ingredients and mix them together in a bowl.
- Add a pinch of salt and pepper.
- Eat.
