They are perfection!
The Glaze
So what makes this glaze so yummy you ask? Well, the combination of balsamic vinegar, coconut aminos, ginger and garlic really create a robust flavor. The balsamic vinegar gets reduced down, so it adds a little bit of gooey deliciousness to the drumsticks and pairs wonderfully with the crispy skin. Balsamic Glazed Chicken Drumsticks (Paleo + GF)
Ingredients
- 1.5 lbs to 2 chicken drumsticks
- 1/3 cup balsamic vinegar
- 1/4 cup coconut aminos
- 2 tablespoons coconut sugar
- 3 cloves garlic, minced
- 2 tsp fresh ginger, grated on a microplane
- 1/2 tsp cassava flour or arrowroot starch
- Optional topping: Chopped green onion
Instructions
- Preheat oven to 450 degrees fahrenheit and line a baking pan with parchment paper* or foil. *(Some parchment paper shouldn't be used for high-heat cooking. Be sure to check the packaging for any heat limits when using parchment paper).
- Place drumsticks on the baking pan and place in the oven to bake for 35 minutes, until browned and slightly crispy on the outside.
- While the chicken is cooking, make your sauce by adding all remaining ingredients to a small sauce pan and mixing well. Heat to a low boil and then turn down the heat to simmer for 4-5 minutes, stirring frequently until the sauce is slightly thickened. Remove from heat and the sauce will continue to thicken a bit as it sits.
- When the chicken has baked for 35 minutes, remove it from the oven and brush on both sides with the sauce. Return to the oven to bake for another 5 minutes and then remove. Allow to cool for a few minutes and serve.
Made these today, and they were delicious! The sauce is the boss! I threw them on the grill for the last 5 min instead of back in the oven, and they were caramelized just perfectly. Delicious! I’ll be making these again, and the sauce pretty much any time I grill chicken. Yum!

Mmmm that sticky balsamic glaze has got me licking my lips! I love making drumsticks for dinner, so much more flavorful than chicken breasts!
