Are you looking for a super simple, easy weeknight meal? We’ve got you covered with this one pan Italian sausage with onions and peppers. It is quick to throw together with only three ingredients, and you can add an optional fourth ingredient if you like.
The Ingredients
It is really as simple as the recipe title. All you need is some Italian sausage, bell peppers and an onion. You can choose your favorite colored bell peppers. We happened to have green and red on hand when we made this to take photos. Orange and yellow are also really tasty.
For the Italian sausage. A clean Italian sausage can be a tougher item to find though, and we’ve done our best to find a clean and readily available one. We use Isernio’s spicy Italian sausage, which we purchase regularly at Trader Joe’s. You can use their store locator to find a location that sells it near you.
To White Rice Or Not?
Ok, first let’s just get it out of the way. You are right. White rice is probably not technically Paleo. This post from Paleo Leap is full of great info on the pros and cons of eating rice and how it can fit into a Paleo lifestyle. You can make the call the for yourself, but Justin and I do eat white rice sometimes. If you are anti-rice, you could pair this one pan Italian sausage with onions and peppers with cauliflower rice.

One Pan Italian Sausage with Onions and Peppers (Paleo + Whole30)
Ingredients
- 1 lb Italian sausage links, - cut in half
- 2 Bell peppers, - top and seeds removed and sliced into strips
- 1 Onion, - sliced into rings or small pieces
- 2 cups Cauliflower or regular rice, - optional
Equipment
Instructions
- Preheat oven to 425 degrees fahrenheit.
- Cut ingredients as noted above.
- Spread ingredients out on a large baking pan in a single layer. Place in oven to cook for 30 minutes.
- While cooking, prepare rice or caluliflower rice (if applicable).
- Remove from oven and serve.
Is the pan greased or any oil on the vegetables?
We didn’t for this recipe, but you certainly could drizzle a little avocado oil or whatever cooking oil you prefer on veggies before you toss it all in the oven.
