Ingredient notes
- Rice – we opt for a long grain white rice, like Jasmine, because when we tested this recipe we noted it it cooked quickly.
- Frozen vegetables – we like to use whatever frozen veggies we have one hand, which is often peas, carrots and broccoli or a Normandy mix with broccoli, cauliflower and carrots. From testing, they all work great.

If you’re making this for meal prep, follow these simple tips.
- Make this on Sunday to have in the fridge for the work week.
- Section it out into separate air tight containers in the fridge, so it’s all packed up and ready to go for lunches.

35-Minute Ground Chicken and Rice with Veggies
Ingredients
- 1/2 onion, diced
- 1 tbsp avocado oil
- 1 lb ground chicken
- 1 cup uncooked rice, (we use white jasmine rice)
- 2.33 cups chicken broth, (or vegetable broth)
- 16 oz frozen mixed veggies, (we often use peas, carrots and green beans or a normandy mix)
For the seasoning mix:
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp ground sage
- 1 tsp oregano
- 1 tsp sea salt
Instructions
- Prep onion as noted and combine all of the seasoning ingredients in a small bowl or ramekin and set aside.1/2 onion, diced, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp smoked paprika, 1 tsp ground sage, 1 tsp oregano, 1 tsp sea salt
- Add oil to a large skillet (use one with a cover) and once it's heated up add the onion, ground chicken and seasoning mixture to the pan and break up into bits. Stir occasionally until browned, about 7-8 minutes.1 tbsp avocado oil, 1 lb ground chicken
- Once the chicken is browned, add uncooked rice, frozen veggies and broth to the pan. Stir to mix well and evenly distribute the rice.1 cup uncooked rice, 16 oz frozen mixed veggies, 2.33 cups chicken broth
- Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 20 minutes, or until the rice is fully cooked. Serve once rice is cooked and enjoy!




Not bad but very bland considering the seasonings. Not much flavor sad to say.
Sorry you didn’t enjoy the recipe. We think that there is plenty of seasoning to flavor this dish but everyone has different taste.
Made this tonight and it was a hit! I left out the onion due to reflux issues and it was still delicious. I also did boil ina bag rice and mixed it in at the end because I didn’t have anything else and it came out perfect. I also did the peanut sauce.. omg! I never would have thought these 2 flavors would mix but it was so good! Def making enough for leftovers next time.
I just made this tonight. It was quite good. I will make it again. I used shredded cabbage and carrot for the veg and added some chili flakes and a little brown sugar cuz that’s the way l roll.
I made this last night & it was soo good. My husband loved it & he never likes anything healthy. I’ll definitely be making this again

Very easy recipe to follow. I like that the measurements of spices are consistent so I have less washing up to do. Same with using one pot for everything. I substituted frozen green garbanzos beans (from Sprouts) because that’s what I had. I only added 2 cups of broth because there was already liquid in the pan after sautéing the chicken and onions. The final product still had too much liquid but I just cooked it with the lid off to dry it out. I added Parmesan cheese (not sure if that was a wise choice but I felt it needed an extra layer of flavor). My husband said he’d happily eat it again. It was super easy so I’ll take the win. I liked this! Had peas, corn, and green beans but would replace at least the peas as I don’t love the sweetness. I added like 50% more of the spices and swirled in some veg bouillon in lieu of salt. Made the chipotle aioli and LOVED it on top. Steamed broccolini on the side with aioli as well.
