Only 4 ingredients in these easy keto pancakes

These bacon pancakes are basically bacon and eggs morphed into pancake form. Here are the simple ingredients:

  1. Bacon – Make sure you’re using sugar free bacon to keep it low-carb.
  2. Eggs – These bind everything together to make it a true “pancake”
  3. Almond butter – A binder and also a thickener, this gives the batter a creamy texture. Again, watch out for added sugar if you’re watching carbs.
  4. Butter – A rich, buttery flavor gets baked right in with the pancakes!

PRO TIP: These pancakes are freezer-friendly. Just cook and place them on a parchment lined baking sheet and freeze. Transfer to an airtight bag or container. Reheat in the toaster or microwave.

They’re also low carb pancakes packed with protein

Let’s be honest, most pancakes are loaded up with sugar and refined carbs and not very filling.

Since these pancakes are more on the savory side, here are some recommended toppings:

  • Sour cream
  • Melted cheese or cream cheese
  • Full-fat greek yogurt
  • Full-fat coconut yogurt (tastes similar to greek yogurt but a dairy-free option)
  • Chopped chives or scallions
  • A dollop of Chipotle Aioli

Of course, if you are looking for a little salty-sweet combo you could always use a touch of maple syrup.

Easy 4-Ingredient Bacon Pancakes

These bacon pancakes are drool-worthy! With only 4-ingredients, they come together quickly. Rich, savory and filling, you might not want to go back to regular pancakes ever again. Paleo-friendly and a good keto pancake option too.

Ingredients

  • 6 pieces bacon, diced
  • 3 eggs
  • 1/4 cup almond butter
  • 2 tbsp butter, melted

Instructions
 

  • Heat a skillet over medium heat and add diced bacon. Cook, stirring occasionally, until the bacon is getting crispy, about 6-7 minutes. Remove and place on a paper towel lined plate and reserve bacon grease in the pan. 
  • While the bacon is cooking, mix the eggs, almond butter and butter together in a bowl. 
  • When the bacon is finished, add it to the bowl and mix again.
  • In the same skillet you cooked the bacon in over medium-low heat, add a couple of large spoonfuls of the batter. Cook about 3-4 minutes on each side.
