These bacon pancakes are basically bacon and eggs morphed into pancake form. Here are the simple ingredients:
- Bacon – Make sure you’re using sugar free bacon to keep it low-carb.
- Eggs – These bind everything together to make it a true “pancake”
- Almond butter – A binder and also a thickener, this gives the batter a creamy texture. Again, watch out for added sugar if you’re watching carbs.
- Butter – A rich, buttery flavor gets baked right in with the pancakes!
PRO TIP: These pancakes are freezer-friendly. Just cook and place them on a parchment lined baking sheet and freeze. Transfer to an airtight bag or container. Reheat in the toaster or microwave.

Easy 4-Ingredient Bacon Pancakes
Ingredients
- 6 pieces bacon, diced
- 3 eggs
- 1/4 cup almond butter
- 2 tbsp butter, melted
Instructions
- Heat a skillet over medium heat and add diced bacon. Cook, stirring occasionally, until the bacon is getting crispy, about 6-7 minutes. Remove and place on a paper towel lined plate and reserve bacon grease in the pan.
- While the bacon is cooking, mix the eggs, almond butter and butter together in a bowl.
- When the bacon is finished, add it to the bowl and mix again.
- In the same skillet you cooked the bacon in over medium-low heat, add a couple of large spoonfuls of the batter. Cook about 3-4 minutes on each side.
What can I substitute the almond butter for?
Another nut butter should work (peanut, cashew, etc.). Just watch the carbs if you’re tracking them.
